Whole30 Day #1, Meal #1

I'm getting married in 5 and a 1/2 months.  Obviously, every bride wants to look and feel their best on their wedding day so starting in February I decided I would try and get slim and fit, and maybe even start drinking green juice.  Needless to say, I've been working out but haven't really put the full effort in which means I am not seeing or feeling amazing results.

Don't get me wrong, working out makes me feel good, but I am looking not just to lose weight but to feel more sound mentally and physically.  And that comes not just from staying active, but from the food you eat.

I've always been into healthy foods, with a farm-to-table, organic, mentality but after years of loving vino, and eating Grandma's spaghetti (which is the best in the world) I realized that even working out couldn't completely change my bad habits - I really needed to reevaluate my relationship {love for} food.

So I Googled the Whole9 and Whole30 and picked up "It Starts With Food" (on my Kindle for 9.99 - best way to buy it!). 

I was intimidated by the book's contents at first, because I am not really science-y.  I was also hesitant because I really don't believe in fad diets.  I believe in eating nutritious food and including as many food groups as make you happy. But I figured, what the hell, it's 10 bucks, and I'm sure I'll learn something.  So I foraged ahead and decided that if I wanted to clean up my eating habits, I had to start somewhere.

And I must say, I've been pleasantly surprised.  The book is really entertaining and broken down in a way that even the dullest science mind {aka me} can understand.  So I started the book and today I start my Whole30.

In preparation for the Whole30, I went a bit crazy.  I drank some wine, ate lots of rice, beans, potatoes, and even some frozen yogurt,which for those that know me, I am not normally into ice cream - I'm into savory, not sweet.

So...after binging all weekend in preparation for the Whole30, I started this Monday morning with a clean slate and plate, of spinach, mushroom, and onion frittata.


Easiest recipe in the world, courtesy of yours truly and my Grandma!
  • Sauté onions, mushrooms, and spinach in EVOO
  • Add scrambled eggs
  • Cook on stovetop for about 10 minutes
  • Place in oven, under the broiler for about 7 minutes
  • Voila - a browned, delicious, and nutritious frittata
It was delicious and filling.  Next time I might add some chicken sausage for a little something different, but so far, so good.
